Perfect BBQ Ribs – Just in Time for 4th of July!

This recipe sounds so delicious…I can see a stampede to Central Market in the works.  Famous Dr. Pepper baby back ribs (serves 4 if you got a mess of other fixins or 3 if you have a hungry couple!)

Ingredients:

1 large, meaty babyback rib rack (preferably Berkshire pork from Central Market)
1- 6 pack Dublin Dr. Pepper (grab ‘em at CM, they use sugar and not corn syrup for a wonderful flavor. Regular DP works, the tast won’t be as carmelized)
1 bottle Stubbs pork marinade ( more local stuff!)
1 stick unsalted butter
1 bottle your Fave BBQ sauce. We like Rufus teagues honey sweet at Central Market

In a large plastic sealable tub, place rack o ribs meaty side down. Pour bottle of Stubbs all over them and two bottles of Dr. Pepper. Marinade 24 hours in the fridge.

The day of, pour marinade and pork into a large 6 qt crock pot or Dutch oven and cook on low for about 5 hours or until the meat is tender but not falling from bone.

Light a grill on low heat. You may want to throw some soaked  smoke chips in there for a kick . (pecan or apple wood…. Mmmmm)

Anyway, gently place your ribs meat side up and brush that gorgeous rack with a cup of that melted stick butter. Be sure to do that off the direct heat, or ooh Nelly! You gotcha too much flame! Then slather up the rest of your BBQ sauce (Rufus teague rocks, but this is all a matter of choice here.) let those tasty riblets drink in the sauce for about 3-4 minutes.

Serve with ice cold beers and Dublin Dr. Peppers, grilled corn and bean salad and celebrate living in the great USA!! Happy Fourth Austin!!
