Janet’s Cauliflower Salad

The best recipes are the ones you fix over and over again, the tried and true. Here is another great salad recipe from my collection. I first had it about twenty years ago and fell in love with it. It is a little tedious to prepare, but well worth it. Here’s what you’ll need:

Janet’s Cauliflower Salad

1 head cauliflower (separated into tiny florets)

1 head iceberg lettuce (torn or cut into bite size pieces)

1 small jar (9 oz) Hellmann’s Real Mayonnaise (no substitution)

1 small container (3 oz) of Kraft Parmesan cheese

1 jar (2.8 oz) of Hormel real bacon pieces

To prepare you’ll need a large, deep bowl for layering of the ingredients. First, cut or tear the lettuce into bite size pieces and put them in the bottom of the bowl. Secondly, separate the cauliflower into small florets and lay them across the lettuce pieces. Next, gently pour out the entire jar of Hellmann’s and using a knife smooth it gently across the cauliflower. Then sprinkle the bacon pieces on top of the mayonnaise. Lastly, pour the entire container of parmesan cheese on top of the bacon making sure to distribute it evenly. Refrigerate overnight if possible. Before serving, toss to coat the lettuce. This salad is so delicious! Once my family and friends eat this salad, I am instructed to bring it again and again. The cauliflower in the salad is a mystery to people – most everyone tends to think it is chicken. I like this recipe because cauliflower is not frequently used in many dishes so it’s a chance to use an ingredient that’s not overly used.

Tips: Don’t substitute a low-calorie version of mayonnaise, and I highly recommend that you don’t use any other brand except Hellmann’s. I’ve done both of these things and the salad just did not come out as good. Same advice for the Kraft parmesan and the Hormel bacon pieces, though I have used the reduced fat bacon pieces by Hormel and it doesn’t affect the taste. If you are in a hurry, you can try cutting the cauliflower into tiny pieces with a knife, however it doesn’t look as pretty as when you break the florets by hand.
