Homemade Pimento Cheese: Yum!
My mother used to make this pimento cheese recipe and my husband couldn’t seem to get enough of it. It’s so much better than what you buy in the store, and is a nice alternative to everyday sandwich meat.
Homemade Pimento Cheese
1 lb. Velveeta cheese
1 small jar chopped pimentos (drained)
Miracle Whip
Pinch of salt
Pinch of Sugar
Grate the Velveeta cheese, add the pimentos, slowly add small spoonfuls of the Miracle Whip being careful not to add too much, and blend together. You want it to be moist but not smothered in Miracle Whip. Then add a pinch of salt and a pinch sugar. Mix well and chill. This is great on crackers, sandwiches or stuffed in celery sticks.
