Chinese Coleslaw

I love cabbage!  It is one of my favorite vegetables.  I know not everyone likes it, but if you do, here is a delicious recipe my husband introduced me to.  There are similar recipes that I’ve tried but this one is a favorite.  Enjoy!

CHINESE CABBAGE SALAD

Ingredients:

1 head of cabbage (or 2 bags of shredded coleslaw mix)
3+ green onions (with greens) diced
2 package Ramen noodles
1 4oz package Slivered Almonds

Toast the Almonds in a 350 degree oven for approximately 6-7 minutes, until lightly browned.

Slice and dice the Cabbage into small pieces. Add the diced onions.

Scrunch up the Ramen Noodles (I use a small kitchen hammer to break them up in a Zip lock bag. Add to the salad. Reserve the flavor packet that comes with the noodles.

Dressing:

1/2 cup Oil
The flavor packets from noodles
3 T. Rice-Seasoned Vinegar
3 T. Sugar
Dash of Salt and Pepper
